Stuffed Tomatoes


Stuffed Tomatoes
Prep Time: 15 min    Cook Time: 25 min    Ready In: 40 min
Serving Size: 6



INGREDIENTS

6 Large Tomatoes
1 1/2 Cup Rice
1/2 Presley Pesto (Recipe to Follow)
1 Carrot, Finely Diced
1 Celery, Finely Diced
1/2 Onion, Finely Diced
3 Tbs Olive Oil



DIRECTIONS

Preheat oven to 350 degrees.

Core the top of the tomatoes and remove the inside of the tomatoes. Drain the liquids and seeds from the inside of the tomatoes.

In a large bowl, combine rice(fully cooked), carrot, celery, onion and pesto. Mix well and fill tomatoes.

Drizzle oil onto tomatoes and bake for 25 minutes.



PRESLEY PESTO

1/4 Cup Olive Oil
1/2 Bunch Presley
1 Tsp Salt
1 Tsp Pepper
1 Clove Garlic
1/4 Cup Pine Nuts

Place all ingredients into a blender and blend until all the ingredients are mixed into a pesto consistency.
